DG CHICKEN
Ingredients
5 plantains, sliced
1 chicken, washed and cut into medium pieces
1 onion, chopped
4 garlic cloves, minced
1 tablespoon fresh ginger, very finely chopped
1 green bell pepper, sliced
1 stock cube or Maggi Cube
1 carrot, sliced
1 cup sliced green beans
2 fresh tomatoes, diced
1 cup celery, chopped
Black or white pepper
1 tbsp basil leaves
Oil for frying
2 tablespoons oil
1 cup of water
Optional: parsley, leeks
Preparation of Chicken DG:
Step 1: Heat the vegetable oil and fry the plantains. Fry them until golden. Remove and reserve.
2nd step: On the chicken, add a good amount of white or black pepper. Then add a little salt and mix well.
Step 3: Fry the chicken until golden brown and cooked through. Remove and reserve.
Step 4: In a large pot, heat the 2 tablespoons of vegetable oil. Add carrots and green beans. Then fry for a few minutes.
Step 5: Add the tomatoes to the pot with the onion, garlic and ginger. Cover and cook over low heat for 5 minutes.
Step 6: Add celery and black pepper. Add the basil leaves and the stock cube. Sauté for at least 5 minutes.
Step 7: Add the fried plantains with a glass of water. And return the fried chicken to the pot. Add green pepper and salt to taste.
Replace the lid and cook over low heat for 15 minutes. Remember to stir occasionally to prevent the plantains from sticking to the bottom of the pot.
